Smoked Turkey Tea Sandwiches
These sandwiches are delicious for your autumn tea party or any afternoon brunch event.
Makes 8 sandwiches
2 ounces cream cheese
1 tablespoon chutney, your favorite
1/4 teaspoon dried sage
1 tablespoon whole cranberry sauce
4 slices whole grain bread
1/4 pound smoked turkey, sliced thin
1 ripe tomato, cored and sliced thin
Watercress, or small leaf gourmet salad greens
Mix together cream cheese with chutney, sage, and cranberry sauce.
Spread on the 4 slices whole grain bread.
On 2 slices of bread, arrange the watercress or salad greens. Add the turkey and tomato slices.
Top with the remaining 2 slices of bread. Pat together and refrigerate to allow the tomato juices to settle.
Before serving, use a long sharp thin knife to slice off the bread crusts. Cut the sandwiches into quarters diagonally.
Makes 8 servings.
