While this fruit is called a "cooking banana," it has more calories than regular bananas.
There are 90 calories in a half cup of plantains weighing 74 grams according to the US Centers for Disease Control.
There is no fat, cholesterol, or sodium.
There are 24 grams of carbohydrates, but only 11 of those grams are sugars.
There are two grams of dietary fiber and only one gram of protein.
This fruit supplies 15% of Vitamin A daily value and 25% of Vitamin C daily value.
It is a good source of potassium, but is otherwise low in vitamins and minerals.
Green, yellow, or black plantains
You may choose your plantain and eat it at various stages of ripeness.
They may be stored at room temperature. Refrigeration will slow down the ripening process.
As with all produce, avoid fruits with bruised or broken skin.
Serving ideas
When green, this fruit is starchy. It is used in cooking as you would use a potato in soups, stews, baked, or fried.
When yellow, it is sweeter and gives a more exotic flavor to sauteed vegetables, or in sauces.
When black, it is sweet enough to eat like a banana, use in fruit salads and desserts.
